- Pour the gin, grapefruit juice and cane sugar syrup into a shaker and fill up with ice. Close it and shake vigorously.
- Decant the cocktail into a tall glass and gently add in the Prosecco.
- Take a lemon and finely chop the zest over the top of the cocktail.
- This allows the aromatic oils to diffuse throughout the glass.
- Quickly rub the edge of the glass with the zest before adding to the glass.
