Waffle of seaweed with smoked mackerel and shrimp

Method

Waffle of seaweed

Preparation

Mix all the ingredients in a mixing bowl and add: 400ml water with 10g seaweed powder and 10g mixed seaweed
4 egg yolks

80g butter
120g milk with 10g yeast
beat 4x egg whites and fold into the batter

Pre-bake for 6 minutes in a waffle iron. 

Cream of mackerel

Preparation 

Boil up the cream. Add the gelatine. Take the mackerel through the food processor and add. Allow to cool down.

Add the semi-whipped cream. Season with pepper and salt.

Finish off with hijiki seaweed, hand-peeled grey shrimp and wheatgrass.
