Ingredients
Serves 4 people
  • 2 tsp Lindemans Framboise lambic beer
  • 4 egg yolks
  • 1/3 cup sugar
  • 1 small bowl of fresh raspberries

Preparation 

  1. Crack 4 eggs and separate the yolks, discarding the whites. Place the egg yolks in a tall bowl over a double boiler.  
  2. Add the Lindemans Framboise lambic beer and mix in the sugar , combining them with the yolks.
  3. Whisk continuously over medium heat until the mixture becomes light and fluffy, about 6 minutes.
  4. Divide the fresh raspberries into serving bowls and spoon the sabayon over them.
  5. Serve immediately for the best texture and flavour.
