Brussels Waffles with Lindemans Faro-Lambic

Ingredients
Serves 4 people
  • 30 cl Lindemans Faro-Lambic beer
  • 200 g whole milk
  • 1/3 vanilla pod
  • 20 g yeast
  • 50 g granulated sugar
  • 1/2 tablespoon peanut oil
  • 40 g egg yolks
  • 250 g flour, sifted
  • 130 g butter, melted
  • 60 g egg whites

Preparation 

  1. Heat the milk with the vanilla to about 40°C, then dissolve the yeast in the mixture. Remove from heat.
  2. Add 3/4 of the sugar, the Lindemans Faro-Lambic beer, peanut oil, and the egg yolks.
  3. Fold in the sifted flour and the melted butter.
  4. Beat the egg whites with the remaining sugar and gently fold them into the mixture. Cover and let the batter rise in the refrigerator for one hour. 
  5. Using about one ladle of batter per waffle (roughly 70 ml), bake in a waffle iron for about 2.5 minutes, then remove and place on a wire rack.  
  6. Repeat until all the batter is gone. Â
