Our brewers’ secret

This unique Oude Gueuze starts with a blend of 1- to 3-year-old lambic beer, slowly matured in oak barrels. Into this refined base, we add freshly cut Thai ginger, known for its vibrant citrusy spice. The ginger gently infuses the lambic, releasing its natural aromas. After bottling, this ginger-flavoured beer undergoes a second fermentation, giving it a bold, refreshing twist. The result? A beautifully balanced Oude Gueuze with a lively tartness and the warm, invigorating touch of fresh ginger.

Elevating Oude Gueuze with a touch of Thai elegance

Elevating Oude Gueuze with a touch of Thai elegance

We use real fresh Thai ginger—also known as Galanga—for its unique aromatic profile. Unlike common ginger, Galanga offers a more complex character with subtle citrus notes and a refined spiciness.

Ginger has been a key ingredient in Asian cuisine for centuries. Valued not only for its bold, warming flavour, but also for its ability to balance and brighten dishes, it pairs beautifully with ingredients like lime, coconut, and chili. That same versatility makes it a perfect match for the layered complexity of lambic—bringing harmony, freshness, and a surprising twist to a traditional Belgian classic. This ginger-flavoured beer will elevate any dinner party with its exceptional and complementary taste.
