At Lindemans Brewery, our fruit beers begin with one essential element: lambic. It’s a style of beer that isn’t simply brewed but born from spontaneous fermentation and the air of the Pajottenland region. Lambic is nature at its purest, thanks to the wild yeasts that are living, evolving and wonderfully unpredictable.

When we combine lambic beer with real fruit, we introduce a second force of nature. Cherries, peaches, raspberries… each with their own sweetness, acidity and enticing aroma.

Between these two natural ingredients stands a true craftsperson: the blender. Their expertise ensures that every blend of lambic and fruit results in a perfectly balanced beer with the bold flavour that consumers expect from Lindemans Brewery.

Every fruit we use reacts differently when blended with lambic. Cherries add brightness and freshness, peaches bring a rounded softness, raspberries offer intense colour and aroma. And just like lambic, fruit can vary from season to season.

Fruit is entirely dependent on the goodwill of nature, so our in-house experts taste every new harvest of incoming fruit and adjust their blending accordingly, guaranteeing the best quality all year round. This means that the creation of our fruit beers are not an exact science, but a craft built on experience and taste.

Finding the perfect balance between lambic beer and fruit requires precision and expertise; that is where our blenders truly shine.

Blending is similar to the work of a master cheesemaker. You work with living ingredients that continue to develop, day after day. Lambic evolves in its own rhythm, fruit shifts with every harvest, and it’s the blender’s job to understand how these natural elements behave and how they can complement one another.

It’s upon our blenders to combine lambic and fruit into one harmonious whole. They choose the right barrels, decide which lambics pair best, determine ideal proportions in combination with the fruit, and know how to achieve the familiar, consistent flavour that defines every Lindemans fruit beer.This craft relies on experience, intuition and a highly trained palate. Our blending team consists of three experts who taste, select, blend and perfect our beers every single day. Each has a unique background and an unrelenting passion for quality that you can taste in each of our award-winning fruit beers.
