10 ml Lindemans Framboise lambic beer

4 egg yolks
-
80 g sugar

1 small bowl 125g of fresh raspberries
PreparationÂ
- Crack 4 eggs and separate the yolks, discarding the whites (or, save them to use in our recipe for Brussels Waffles with Lindemans Faro-Lambic). Place the egg yolks in a tall bowl over a double boiler. Â
- Add the Lindemans Framboise lambic beer and mix in the sugar , combining them with the yolks.
- Whisk continuously over medium heat until the mixture becomes light and fluffy, about 6 minutes.
- Divide the fresh raspberries into serving bowls and spoon the sabayon over them.
- Serve immediately for the best texture and flavour.Â
