A second fermentation like fine wine
After macerating the cherries, Oude Kriek undergoes a second fermentation in the bottle—similar to the méthode champenoise used for sparkling wines. This traditional process creates natural carbonation and allows the flavours to evolve over time. Just like wine, it can be stored and cellar-aged, developing even more complexity and depth for 10 years or more!
